we have all heard that breakfast is the most important meal of the day and i can personally attest to this. in the rare occasion when i don’t eat enough breakfast, i find myself sluggish, hangry and susceptible to all sugary treats that cross my path (or put me on a path to ingest them).

for the most part, my husband and i eat healthy because we’ve found it helps our bodies and minds feel better. especially after doing the whole30, we are even more conscious about what we put into our bodies when it comes to how food is processed.

we like a lot of protein in the morning because it helps to keep you fuller longer. this helps you to make healthy choices whether you work from home or at the office because donuts are tempting always (and in moderation totally acceptable but not every week).

one of my favorite things to make for breakfast are easy egg muffin cups! they are super easy and can last for days (in a good way)! i contemplated just calling it egg muffins but that didn’t feel right so “easy egg muffin cups recipe” it is.

the best part of this recipe? you can make it personalized to the picky eaters in your house (that’s me)! every little muffin tin can be personalized (but that might be extreme) so we divide it up. my husband gets all the ingredients he likes in a omelette and i get all the ones i like in mine!

simply pick out your favorite ingredients and prepare them as you would for mixing them into scrambled eggs or an omlette! make sure you have used all of your adorable mini-bowls given to on your last trip to see the in-laws, obviously.

Hillshire Farm Naturals lunch meat has no artificial ingredients (minimally processed), no preservatives, no colors, no added nitrates/nitrites (except for those naturally occurring in the celery juice powder) and it’s gluten free. i picked up a package of lunch meat next to it at safeway to compare them…it was astounding to see all the things other products put in their lunch meats – no thank you.

now i like to mix the egg, egg whites and the ingredients all together because i love to use a whisk (recipe at the bottom for more details) and then pour them in the greased muffin tin. you could also stack your ingredients in the muffin tin and pour your egg mixture over them. the options are endless here, just like when you’re trying to decide what series to start next on netflix.

mine contained ham, spinach and a little pepper. no salt needed because the ham adds the perfect amount of saltiness for me. my husband’s contained turkey, sharp white cheddar cheese, pepper and then some with sun-dried tomatoes and some with diced peppers because i was feeling especially sweet on him. you can tell when i’m being sweet on him since i willingly cut a pepper for him.

since i’ve made these before, i knew the sun-dried tomatoes would for sure sink so i put those in last and they still sort of sank but that’s okay.

you stick them in the oven for 13-15 minutes at 350° and then out pops cute and easy egg muffin cups!

back to the easy egg muffin cups. these are awesome because you can eat them right away or store them in the refrigerator for 5 days. you can even freeze them individually and pop in microwave for a breakfast on the go! they even pair well with a more leisurely breakfast with your exhausted puppy who needs a nap after a night’s sleep. #rufflife

Easy Egg Muffin Cups Recipe

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Serving Size: 12

Ingredients

  • 5 eggs
  • 6 egg whites
  • 4 slices of Hillshire Farm Natural deli meat, diced
  • 1/4 cup of spinach, torn into small pieces
  • 1/4 of red pepper, diced
  • 1/4 shredded cheese (for 6 egg muffins, double if you want more)
  • 4 sun-dried tomatoes, diced
  • Salt and pepper to taste
  • Substitute any type of veggie that you love in omelettes!

Instructions

  1. Heat oven to 350 degrees F
  2. Grease a 12 cup muffin tin
  3. Prepare vegetables and meats to your liking
  4. Whisk together eggs and egg whites in a bowl
  5. Option 1: Mix in all ingredients into eggs and pour into muffin tin
  6. Option 2: Place meat and veggies into muffin tin and pour egg mixture over it
  7. Bake for 13-15 minutes or until the egg cups are firm and toothpick comes out clean
  8. Let cool in pan and either eat immediately, store in refrigerator up to 5 days or freeze individually for later!

    Yum! If I eat too many eggs I get sick but this is just the right amount and all those ingredients look DELICIOUS! (I’m not allergic or intolerant, my tummy just doesn’t like more than 2 eggs at a time… but my mouth/brain loves them! Lol!)

      yes, it’s totally the right amount of eggs and protein for your mornings so hopefully it agrees with your tummy-tum (can you tell i was just talking about my dog and that’s what we call her stomach) 🙂 it’s also easy to mix up the ingredients for whatever you are craving or have left over veggies!
